Cake Batter Cookies

Normally I don't like cookies made with cake mix.  I also don't like crunchy cookies. But I saw this online and I knew I had to try it. Matt went nuts over these as well. They're sooo good and chewy and I love the baking method she used. It makes all the difference. Its the 'round 2' recipe on the site.

Makes 2.5-3 dozen cookies. 

Ingredients:

1 and 1/4 cup AP flour
1 box funfetti cake mix (or a box of yellow or white cake mix)
1/2 teaspoon baking soda
3/4 cup room temp unsalted butter
1/2 cup granulated sugar
1/2 cup light brown sugar
1 egg at room temp
1.5 teaspoon vanilla extract
1 cup chocolate chips (I used all semi sweet but you can use white or a mix)
1/2 cup sprinkles if not using funfetti mix

In a large bowl shift flour, cake mix and baking soda. In a separate bowl or mixer mix butter and sugars on medium speed and then mix in the egg and vanilla



Add the flour mixture slowly and mix until combined. Fold in chocolate chip and sprinkles (if using sprinkles). 


Here is the part that makes a chewy cookie. Chill the dough for an hour (or up to 4 days). Chilling prevents dough from spreading. 

Preheat oven to 350. 

Scoop the chilled dough unto ungreased baking sheet. Form cookies into 'taller' balls with a flat bottom. This will also prevent cookies from spreading and keep them chewy. 



Bake for 10-12 minutes. Edges will be brown and centers will be soft but they will set. 



Yum! They're soooo good.
